"Taking it EASY"

#abetterversionofme2018 I haven't posted in a little while, so here's a quick recap of what's been happening. After returning from my competition in Malaysia mid-October, I had a plan in mind. I wanted to take a bit of a step back, focus on my weaknesses and build some strength. So, I began an 8 week functional bodybuilding program and I commited to some extra training. As I entered week 3 of the program however, I became a little bored with training, a long-time injury started to irritate me again and to top it all off, I got sick. After a little time off, I decided I should really "Take it EASY" up until the holidays, but somehow, over the weeks, my competitive self just kept going. -I improved some skills, I hit some new PRs and I checked off several of my 2018 goals. 2018 CrossFit Goals -I placed 3rd in a 10km road race. Techcombank HCMC International Marathon, December 2nd 2018 I won another small fitness competiton. FEST Battle, Dece

The Hopper Warrior 2018

#abetterversionofme2018 It's only been 2 weeks now since I participated in The Hopper Warrior in Malaysia and I am already missing the crazy competition vibes. That's a bit hard to believe considering it was one of the most exhausting weekends of my life; both physically and mentally. The weekend began with a workout everyone expected me to do well with. I mean, come on, it was called ENDURO MADNESS; that has my name written ALL OVER IT! ;) Luckily, I didn't let down. I worked my butt off and I was rewarded with seeing my name at the top of the leaderboard. What a great start! I knew the second event had many challenging movements for me and that I would have to push myself hard if I wanted to maintain first place. I saw great improvements with my rope climbs and my pull-ups, but unfortunately my push-ups and burpees were just not good enough to keep me on top. I fell to second, but I was still feeling ok with how things were going. The final event on day

PART 1 - Cooking up a storm Over the last few weeks, I have been trying to cook more at home, especially during the work-week. Several meals haven't turned out exactly as I planned them to, but nonetheless, I'm very proud of my efforts so far.  Breakfast - always and forever my favorite meal to cook  Left - Tuna macaroni salad Center - Chicken and sweet potato skillet Right - Stuffed peppers    Left - Pork, vegetables and sweet potato fries Center - Salmon rice bowl Right - Chili Left - Salmon quinoa patties with avocado sauce, sweet potato fries and a side salad Center - Burrito bowl Right - Vegetable curry with a side of pork Noodle-less lasagna Protein balls Super yummy, not so healthy, dessert PART 2 - Eating out I've really enjoyed experimenting with cooking different meals, but I've also found
